Simple Roasted Asparagus Two Ways

My top tip is to snap off the woody ends of the stalks before you start. If you hold each end and bend it, the spear will naturally break exactly where it needs to.
Ingredients

- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Optional: 1/4 cup grated parmesan cheese
- Optional: 1 tablespoon lemon juice
Instructions

Preheat your oven to 400 degrees Fahrenheit.

Wash the asparagus thoroughly and trim the woody ends off the stalks.

Place the asparagus on a large sheet pan and drizzle with olive oil, salt, and pepper. Toss everything with your hands until the spears are evenly coated.

Spread the asparagus out in a single layer so it roasts evenly.

For the classic version, roast for 12 to 15 minutes until the stalks are tender and slightly browned.

For the parmesan version, sprinkle the cheese over the asparagus during the last 3 minutes of roasting. Finish with a squeeze of fresh lemon juice before serving.

Store any leftovers in an airtight container in the fridge for up to 3 days. These spears are great served cold in a salad or lightly reheated in a pan.
