Zucchini Fritters with Feta and Mint

- 100 grams feta cheese, crumbled
- 2 tablespoons fresh mint, chopped
- 2 green onions, thinly sliced
- 1/2 cup all purpose flour
- 1 large egg, lightly beaten
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil for frying

Place the grated zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes, then squeeze the zucchini very firmly with your hands or a clean cloth to remove all excess liquid.

In a large mixing bowl, combine the dried zucchini with the crumbled feta, chopped mint, sliced green onions, flour, beaten egg, and black pepper. Stir until everything is well incorporated.
