My favorite trick for this recipe is to use the best quality tomatoes you can find. If you have some balsamic glaze in the pantry, a little drizzle over the top makes it taste just like a fancy cafe snack.

Ingredients

  • 1 slice of your favorite sourdough or whole grain bread
  • 1/2 cup cottage cheese
  • 1/2 cup cherry tomatoes, sliced in half
  • 5 fresh basil leaves, torn
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon balsamic glaze
  • A pinch of salt and black pepper
