This zucchini bread is a staple in my kitchen every summer. It is incredibly moist and the pockets of melted chocolate make it feel like a special treat that both kids and adults absolutely love.

My favorite thing about this recipe is how easy it is to throw together. If you have extra zucchini, you can grate it and freeze it in portions so you can bake this bread all year long.

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup grated zucchini
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semi sweet chocolate chips

Instructions

    Preheat your oven to 350 degrees F and grease a standard loaf pan.

    In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and cinnamon.

    In a separate bowl, mix the grated zucchini, sugars, oil, eggs, and vanilla until well combined.

    Pour the wet ingredients into the dry ingredients and stir gently until just combined.

    Fold in the chocolate chips.

    Pour the batter into your prepared loaf pan and smooth the top.
