There is something so special about baking with zucchini during the summer months. This bread is incredibly moist, perfectly spiced, and full of melty chocolate chips that everyone in your house will love.

I personally enjoy this bread because it is a great way to use up garden zucchini while feeling like you are eating a decadent dessert. It stays fresh for several days, making it a reliable staple for breakfast or a sweet afternoon snack.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini, squeezed dry
  • 3/4 cup semi sweet chocolate chips

Instructions

  1. 1

Preheat your oven to 350 degrees F and grease a standard 9 by 5 inch loaf pan.

  2. 2

In a medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and cinnamon.

  3. 3

In a large bowl, beat the eggs, vegetable oil, granulated sugar, brown sugar, and vanilla extract until smooth.

  4. 4

Stir in the grated zucchini until well combined.

  5. 5

Gently fold the dry ingredients into the wet ingredients until just mixed, then stir in the chocolate chips.

  6. 6

Pour the batter into the prepared pan and spread it out evenly.

  7. 7

Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.

  8. 8

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

๐Ÿ’ก Tips

Store your loaf in an airtight container at room temperature for up to three days. If you want to keep it longer, you can wrap slices tightly and freeze them for up to three months. This bread tastes wonderful served slightly warm with a tiny pat of butter.
