Nothing says summer quite like a big bowl of potato salad sitting on a picnic table. It is one of those classic recipes that everyone looks forward to when the grill gets fired up.

I love how the creamy dressing coats the tender potatoes perfectly. If you want the best flavor, try to mix this together a few hours before your party so the dressing really settles into the potatoes.

Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 2 tablespoons sweet pickle relish
  • 2 hard boiled eggs, chopped
  • 2 stalks celery, finely chopped
  • 1/4 cup red onion, finely diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika for garnish

Instructions

    Place the cubed potatoes in a large pot and cover them with cold salted water.
