Turkey and Pesto Panini

There is something so satisfying about a hot, pressed sandwich. The combination of savory turkey and bright, herbal pesto is a classic for a reason, especially when it gets tucked between slices of crusty bread that turn perfectly golden on the grill.

My top tip for the best results is to use a good quality sourdough or ciabatta bread. It holds up well to the heat and gives you that perfect crunch in every bite.

Ingredients

  • 2 slices of sourdough or ciabatta bread
  • 3 ounces sliced deli turkey
  • 1 tablespoon basil pesto
  • 2 slices provolone or mozzarella cheese
  • 2 slices fresh tomato
  • 1 tablespoon softened butter

Instructions

    Spread the basil pesto on the inside of both bread slices.

    Layer the turkey, cheese, and tomato slices onto one piece of bread, then top with the other slice.

    Spread the softened butter on the outside of both the top and bottom pieces of bread.

    Place the sandwich into a preheated panini press or a heavy skillet over medium heat.

    Cook for about 3 to 4 minutes per side until the bread is golden brown and the cheese is melted and gooey.

    Remove from the heat, slice in half, and serve immediately.

You can store leftovers in the fridge for a day, but I recommend reheating them in a skillet rather than the microwave to keep the bread crisp. Feel free to add a handful of fresh spinach or a slice of roasted red pepper to mix things up.
