Turkey and Pesto Panini
This warm and crispy turkey pesto panini is my go to lunch when I want something quick but special.
dailyrecipesbook.comThere is something so satisfying about a hot, pressed sandwich. The combination of savory turkey and bright, herbal pesto is a classic for a reason, especially when it gets tucked between slices of crusty bread that turn perfectly golden on the grill.
My top tip for the best results is to use a good quality sourdough or ciabatta bread. It holds up well to the heat and gives you that perfect crunch in every bite.
Ingredients
- 2 slices of sourdough or ciabatta bread
- 3 ounces sliced deli turkey
- 1 tablespoon basil pesto
- 2 slices provolone or mozzarella cheese
- 2 slices fresh tomato
- 1 tablespoon softened butter
Instructions
- 1
Spread the basil pesto on the inside of both bread slices.
- 2
Layer the turkey, cheese, and tomato slices onto one piece of bread, then top with the other slice.
- 3
Spread the softened butter on the outside of both the top and bottom pieces of bread.
- 4
Place the sandwich into a preheated panini press or a heavy skillet over medium heat.
- 5
Cook for about 3 to 4 minutes per side until the bread is golden brown and the cheese is melted and gooey.
- 6
Remove from the heat, slice in half, and serve immediately.
๐ก Tips
You can store leftovers in the fridge for a day, but I recommend reheating them in a skillet rather than the microwave to keep the bread crisp. Feel free to add a handful of fresh spinach or a slice of roasted red pepper to mix things up.
