There is nothing quite like a big bowl of salad that actually keeps you full. This copycat version of the famous Green Goddess Cobb is packed with protein and fresh greens, making it a perfect meal for a busy day.

You will love the mix of smoky bacon and creamy avocado. My best tip is to make the dressing a few hours ahead of time so the fresh herbs have enough time to flavor the base perfectly.

Ingredients

  • 2 chicken breasts, grilled and sliced
  • 4 strips of bacon, cooked and crumbled
  • 2 hard boiled eggs, quartered
  • 1 ripe avocado, sliced
  • 4 cups chopped romaine lettuce
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions
