Peanut Chicken Ramen Salad

The secret is adding the crunchy ramen noodles right before you serve the dish. It keeps everything fresh and provides a satisfying snap in every bite.
Ingredients
- 2 packs of ramen noodles, seasoning packets discarded
- 2 cups cooked chicken, shredded
- 1 head of cabbage, thinly sliced
- 2 carrots, shredded
- 1/2 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon red curry paste
- 2 tablespoons lime juice
- 1 tablespoon honey
- 2 tablespoons warm water
Instructions

Crush the dry ramen noodles into bite sized pieces using your hands or a rolling pin.

In a large bowl, combine the shredded chicken, cabbage, carrots, cilantro, and green onions.

Whisk together the peanut butter, soy sauce, red curry paste, lime juice, honey, and warm water in a small jar until smooth.

Pour the dressing over the chicken and vegetable mixture and toss well to coat.

Add the crushed ramen noodles to the salad right before serving to keep them crunchy.

Toss once more and serve immediately.

Store the dressing separately from the salad if you plan on eating this over a few days. If you like a little extra heat, feel free to add a pinch of red pepper flakes to the dressing.
