Crispy Pasta Salad
This trendy salad turns regular pasta into golden, crunchy bites mixed with fresh vegetables and a creamy dressing.
dailyrecipesbook.comI am fully on board with the crispy pasta trend. It takes a simple side dish and makes it so much more fun with that perfect crunchy bite in every spoonful. My whole family is obsessed, and it always disappears whenever I bring it to a gathering.
You can serve this alongside grilled chicken, burgers, or fresh sandwiches. It is a fantastic choice for potlucks or summer BBQs because it is easy to customize with whatever veggies you have in your fridge.
Ingredients
- 8 ounces bowtie pasta
- 1 tablespoon olive oil
- 1/4 teaspoon garlic salt
- 1 teaspoon Italian seasoning
- 2 tablespoons grated parmesan cheese
- 3 cups chopped Romaine lettuce
- 1 cup diced English cucumber
- 1 cup halved grape tomatoes
- 1/4 cup diced red onion
- 1/2 cup mayonnaise
- 1/3 cup sour cream
- 2 tablespoons lemon juice
- 1 teaspoon minced garlic
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons grated parmesan cheese
- 1 tablespoon fresh chopped parsley
Instructions
- 1
Cook the bowtie pasta in boiling water until it is al dente, then drain it well.
- 2
Toss the warm pasta with olive oil, garlic salt, Italian seasoning, and 2 tablespoons of parmesan cheese.
- 3
Place the seasoned pasta in your air fryer and cook at 400 degrees Fahrenheit for 12 to 15 minutes, making sure to shake the basket halfway through until the noodles are golden and crunchy.
- 4
While the pasta cools slightly, combine the lettuce, cucumber, tomatoes, and red onion in a large bowl.
- 5
In a separate medium bowl, whisk together the mayonnaise, sour cream, lemon juice, minced garlic, salt, pepper, the remaining 2 tablespoons of parmesan, and fresh parsley.
- 6
Add the crispy pasta to the vegetable bowl, pour the dressing over the top, and toss everything until well coated. Serve immediately.
๐ก Tips
This salad is best enjoyed right after mixing to keep the pasta crispy. If you need to make it ahead, keep the air fried pasta separate from the dressed vegetables and combine them just before serving. Store any leftover dressing in an airtight container in the fridge for up to three days.
