There is nothing quite like a classic chicken club sandwich when you want a satisfying lunch. It has all the layers of flavor that make deli sandwiches so popular, from the savory bacon to the fresh tomato and crisp lettuce, all held together by toasted bread and creamy mayo.

I love this recipe because it is much cheaper than eating out and just as delicious. You can serve it as a hearty double decker stack or keep it simple with a single layer depending on how hungry you are.

Ingredients

  • 2 boneless skinless chicken breasts
  • 4 slices of bacon
  • 4 slices of your favorite bread
  • 2 leaves of green leaf lettuce
  • 1 large tomato, sliced
  • 2 slices of cheddar or swiss cheese
  • 2 tablespoons mayonnaise
  • 1 tablespoon butter
  • Salt and black pepper to taste

Instructions

    Season the chicken breasts with salt and pepper then cook them in a skillet over medium heat until they are golden brown and fully cooked through.

    While the chicken cooks, fry or bake your bacon strips until they reach your desired level of crispiness.

    Toast your bread slices until they are lightly golden and spread a thin layer of mayonnaise on one side of each slice.

    Place a piece of lettuce and a few tomato slices on the bottom bread slice.

    Add the cooked chicken breast on top of the vegetables followed by a slice of cheese and the crispy bacon.

    Top with the remaining slice of bread and secure with toothpicks if you are building a double decker sandwich.

    Slice the sandwich in half diagonally and serve immediately.

To prevent the bread from getting soggy, make sure the bacon is well drained on paper towels before assembly. You can also toast the bread a little extra if you are packing this for a picnic later in the day. Keep leftovers in the fridge for up to one day if stored in an airtight container.
