My secret to the best egg salad is keeping the eggs slightly chunky and adding a little bit of crunch from fresh celery. It stays fresh in the fridge for a day or two, so it is great for meal prep during a busy week.

Ingredients

  • 6 large eggs
  • 1/3 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1 stalk celery, finely diced
  • 2 tablespoons fresh chives, chopped

  • 8 slices of your favorite bread
