Cucumber sandwiches are a true classic for good reason. They are crisp, cool, and so easy to put together when you have guests coming over for tea or a light brunch.

My favorite thing about this recipe is how the seasoned cream cheese adds just enough flavor without overpowering the fresh crunch of the cucumber. Make sure to slice your cucumbers thin so every bite is just right.

Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 large English cucumber, thinly sliced
  • 10 slices white bread, crusts removed

Instructions

  1. 1

In a small mixing bowl, stir together the softened cream cheese, mayonnaise, dill, garlic powder, and onion powder until the mixture is smooth.

  2. 2

Lay out your slices of white bread on a clean cutting board.

  3. 3

Spread a generous layer of the cream cheese mixture onto one side of each slice of bread.

  4. 4

Place the cucumber slices in a single layer over half of the bread slices.

  5. 5

Top with the remaining bread slices, cream cheese side down, to close the sandwiches.

  6. 6

Use a sharp knife to cut each sandwich into four smaller squares or triangles before serving.

๐Ÿ’ก Tips

To keep the bread from getting soggy, pat your cucumber slices dry with a paper towel before placing them on the bread. You can store these in the fridge for a few hours if you cover them with a damp paper towel to keep them fresh.
