Layered Mediterranean Dip
This fresh and vibrant dip is the perfect crowd pleasing appetizer for your next gathering.
dailyrecipesbook.comThere is nothing quite like a cold, refreshing dip when you are hosting friends or family. This Mediterranean version uses a base of smooth hummus and creamy yogurt, which provides a lovely contrast to the crunchy vegetables and salty feta cheese on top. It is always a hit at parties because it looks beautiful on the table and tastes even better.
My favorite thing about this recipe is how quickly it comes together when you need a last minute snack. If you want to save even more time, you can chop all your vegetables ahead of time and keep them in the fridge until you are ready to assemble. Just make sure to add the toppings right before serving so everything stays nice and crisp.
Ingredients
- 2 cups store bought hummus
- 1 cup plain Greek yogurt
- 1/2 cup diced cucumber
- 1/2 cup diced tomato
- 1/4 cup chopped kalamata olives
- 1/3 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- Pita chips or naan bread for serving
Instructions
- 1
Spread the hummus in an even layer across the bottom of a serving platter or shallow glass bowl.
- 2
Carefully spoon the Greek yogurt over the hummus and spread it out gently to cover the surface.
- 3
Sprinkle the diced cucumber and tomato evenly over the yogurt layer.
- 4
Add the chopped olives and crumbled feta cheese on top of the vegetables.
- 5
Finish by drizzling the olive oil over the dip and garnishing with the fresh parsley.
- 6
Serve immediately with your favorite pita chips or warm naan bread.
๐ก Tips
If you have leftovers, keep them in an airtight container in the fridge for up to two days. To keep the dip from getting watery, I suggest adding the cucumbers and tomatoes right before guests arrive. This dip also tastes great with bell peppers or carrot sticks if you want a gluten free crunch.
