Simple Pickled Daikon Radish

Ingredients
- 1 pound daikon radish
- 1 teaspoon sea salt
- 1/2 cup rice vinegar
- 3 tablespoons sugar
- 1/4 teaspoon salt
Instructions

Peel the daikon and slice it into thin rounds or bite sized batons.

Place the radish pieces in a bowl and sprinkle with one teaspoon of salt. Massage it in and let it sit for ten minutes until the radish softens.

Drain any liquid that has gathered at the bottom of the bowl.

In a small container, whisk together the rice vinegar, sugar, and the remaining salt until the sugar dissolves.

Add the radish to a clean jar and pour the vinegar mixture over it.

Seal the jar and keep it in the refrigerator for at least two hours before eating. The flavor gets even better if you wait until the next day.

Store your pickled daikon in an airtight glass jar in the refrigerator for up to one week. You can add a strip of kombu to the jar if you want to add a deeper savory flavor to the brine.
