Homemade Panisses (Chickpea Fries)
These crispy chickpea fries are a delicious, protein packed twist on traditional fries from the Provence region.

- 4 cups water
- 2 tablespoons olive oil

Whisk the chickpea flour, water, olive oil, salt, and pepper in a large saucepan until smooth.

Spread the mixture into an oiled square pan so it is about one inch thick and let it cool completely in the fridge until firm.

Turn the cooled block out onto a cutting board and slice it into strips like thick fries.
