There is something so comforting about a classic Denver omelet. It is the perfect way to start a busy morning because it is filling, savory, and feels like you are sitting in your favorite local diner booth.

My secret to a great omelet is sautΓ©ing the ham and veggies before adding the eggs. It makes sure the peppers and onions are perfectly tender and prevents any extra moisture from making your eggs soggy.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup diced ham
  • 1/4 cup diced green bell pepper
  • 1/4 cup diced yellow onion
  • 3 large eggs
  • 1 tablespoon water
  • 1/2 cup shredded cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. 1

Melt one tablespoon of butter in a medium nonstick skillet over medium heat.

  2. 2

Add the ham, bell pepper, and onion to the pan. Cook for about five minutes until the vegetables are soft and the ham is slightly browned.

  3. 3

Remove the mixture from the skillet and set it aside on a plate.

  4. 4

Whisk the eggs, water, salt, and pepper together in a small bowl until well combined.

  5. 5

Add the remaining tablespoon of butter to the same skillet. Once it is bubbling, pour in the egg mixture.

  6. 6

As the eggs set, gently lift the edges with a spatula to let the uncooked egg flow underneath.

  7. 7

When the eggs are mostly set but still slightly moist on top, spoon the ham and vegetable mixture over one half of the eggs.

  8. 8

Sprinkle the cheddar cheese over the filling, fold the other half of the omelet over the top, and cook for one more minute until the cheese is melted.

πŸ’‘ Tips

Serve this warm with a side of buttered sourdough toast or a few crispy breakfast potatoes. If you have leftovers, store the cooked omelet in an airtight container in the fridge for up to two days and reheat it gently in a pan.
