Classic Easy Steak Tartare

Ingredients
- 1 pound very fresh beef tenderloin or sirloin
- 1 tablespoon capers, finely chopped
- 1 small shallot, finely minced
- 1 tablespoon Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon extra virgin olive oil
- Salt and black pepper to taste
- 1 egg yolk (optional)
- Toasted baguette slices for serving

Use a very sharp knife to cut the beef into small, uniform cubes. Try to keep them about a quarter inch in size.

Add the chopped capers, minced shallot, Dijon mustard, Worcestershire sauce, parsley, and olive oil to the bowl.

Gently fold the ingredients together until everything is evenly combined, but take care not to mash the meat too much.

Divide the tartare onto serving plates and press it into a round shape using a ring mold if you have one.

If using an egg yolk, create a small indentation in the center of the meat and carefully place the yolk inside.
