Ratatouille is one of those timeless dishes that truly shines when garden vegetables are at their peak. It is a humble stew that packs in so much flavor from fresh eggplant, zucchini, and sun ripened tomatoes. I love making this on a slow weekend because the house smells incredible while it simmers.

Ingredients

  • 1 large eggplant, cubed
  • 2 medium zucchinis, sliced
  • 1 red bell pepper, chopped
  • 4 large tomatoes, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

    Heat two tablespoons of olive oil in a large pan over medium heat.

    Add the eggplant and cook until it starts to brown, then remove it from the pan.

    Add the remaining oil and cook the onion and bell pepper until soft.
