This ramen is a wonderful way to turn a simple noodle dish into a filling, wholesome meal that feeds a crowd. By building the broth from scratch with ginger, garlic, and savory seasonings, you get a much deeper flavor than those instant packets ever could. It is the perfect recipe for busy days when you want something cozy waiting for you at dinnertime.

Since this recipe makes a large batch, it is great for hosting friends or for prepping lunches for the week. The secret is adding the ramen noodles at the very end of the cooking time, which keeps them perfectly tender rather than mushy.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 8 oz mushrooms, sliced
  • 1 small onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 garlic cloves, minced
  • 2 tsp fresh ginger, minced
  • 3 cups chicken broth
  • 1 cup soy sauce
  • 1/2 cup rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp sriracha
  • 1 tbsp brown sugar
  • 2 packs ramen noodles, flavor packets discarded
  • 2 green onions, sliced

Instructions

  1. 1

Place the chicken breasts, sliced mushrooms, onion, red bell pepper, minced garlic, and ginger into your slow cooker.

  2. 2

In a separate bowl, whisk together the chicken broth, soy sauce, rice vinegar, sesame oil, sriracha, and brown sugar. Pour this mixture over the chicken and vegetables in the slow cooker.

  3. 3

Cover and cook on high for 3 hours or on low for 6 hours until the chicken is tender and fully cooked.

  4. 4

Remove the chicken breasts from the slow cooker and shred them with two forks before returning the meat back to the pot.

  5. 5

Add the ramen noodles to the slow cooker and stir gently to submerge them in the liquid.

  6. 6

Cook on high for an additional 15 minutes or until the noodles are tender.

  7. 7

Serve warm, topped with fresh sliced green onions.

๐Ÿ’ก Tips

Store leftover ramen in the fridge in an airtight container for up to three days. If you want to try different flavors, stir in a spoonful of miso paste or peanut butter during the final 15 minutes of cooking. You can also use chicken thighs if you prefer a slightly richer broth.
