Simple Fresh Cherry Tomato Pasta

My secret for this dish is to let the tomatoes cook down slowly until they release all their juices. Don't rush this part because that golden tomato liquid creates a delicious sauce without needing any heavy cream.
Ingredients
- 1 pound spaghetti or your favorite pasta
- 2 pints cherry tomatoes, halved
- 4 cloves garlic, thinly sliced
- 1/2 cup fresh basil leaves, torn
- 2 tablespoons balsamic vinegar
- 1/3 cup grated Parmesan cheese
- 1/4 cup extra virgin olive oil
- Salt and black pepper to taste
- Red pepper flakes optional
Instructions

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the cherry tomatoes and garlic to the skillet, then cook for about 8 to 10 minutes until the tomatoes soften and burst, creating a natural sauce.

Stir in the balsamic vinegar and a pinch of red pepper flakes if you like a little heat.

Drain the pasta, reserving a splash of the cooking water, and add the noodles directly into the skillet with the tomatoes.

Toss everything together well, adding a little pasta water if the sauce looks too thick.
