There is something so wonderful about the combination of juicy grilled steak, charred peppers, and creamy avocado. This salad gives you all those classic fajita vibes but keeps things light by skipping the heavy flour tortillas.

I love making this for a quick weeknight dinner because the honey lime dressing brings everything together perfectly. If you want a little extra heat, feel free to add a pinch of chili flakes or a chopped jalapeΓ±o to your dressing.

Ingredients

  • 1 pound sirloin steak
  • 2 bell peppers, sliced into strips
  • 1 large yellow onion, sliced
  • 1 tablespoon olive oil
  • 4 cups mixed salad greens
  • 1 ripe avocado, sliced
  • 3 tablespoons lime juice
  • 1 tablespoon honey
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. 1

Season the steak with salt, pepper, and a little cumin.

  2. 2

Heat a tablespoon of oil in a large skillet or grill pan over medium high heat.

  3. 3

Cook the steak to your preferred level of doneness, then remove it from the pan and let it rest for five minutes before slicing.

  4. 4

In the same pan, add the sliced peppers and onions and cook until they are tender and slightly charred.

  5. 5

Whisk the lime juice, honey, olive oil, and cumin in a small bowl to make the dressing.

  6. 6

Arrange the mixed greens on plates or a large platter.

  7. 7

Top the greens with the cooked peppers, onions, sliced steak, and fresh avocado.

  8. 8

Drizzle the honey lime dressing over the top and serve immediately.

πŸ’‘ Tips

Store any leftover dressing in an airtight container in the fridge for up to three days. If you are prepping this for lunch the next day, keep the avocado fresh by adding it right before you eat.
