Classic New England Lobster Rolls

Ingredients
- 2 pounds raw lobster tails, thawed if frozen, or 1 pound cooked lobster meat
- 1/4 cup mayonnaise
- 3 tablespoons finely minced celery
- 1 teaspoon lemon zest
- 1/2 teaspoon Dijon mustard
- 1 1/2 teaspoons minced fresh chives
- 1/4 teaspoon salt
- A few grinds of fresh black pepper
- 6 New England style split top hot dog buns
- 2 tablespoons unsalted butter, softened
- 6 leaves of Boston lettuce

If cooking fresh lobster, bring a large pot of salted water to a boil. Add the lobster tails and cook for 5 to 7 minutes until the shells are bright red and the meat is opaque.

Immediately transfer the lobster tails to a bowl of ice water to stop the cooking process for 5 minutes.

Remove the meat from the shells by cutting the underside with kitchen shears, then chop the meat into large, bite sized chunks.

In a large bowl, whisk together the mayonnaise, celery, lemon zest, Dijon mustard, chives, salt, and pepper.

Add the lobster meat to the bowl and fold gently until the pieces are evenly coated.

Spread the softened butter on the flat sides of your split top buns. Toast them in a skillet over medium low heat until they are golden brown.

Place a lettuce leaf inside each toasted bun and spoon the lobster salad generously into the center before serving.
