This Waldorf chicken salad is one of my absolute favorite things to make when I want a lunch that feels a bit special but takes almost no time at all. The mix of textures is what makes it so good, especially with the crunch of fresh celery and apples paired with the softness of the grapes.

It is a wonderful way to use up leftover rotisserie chicken from the night before. If you want a little extra flavor, try toasting your walnuts in a dry pan for a few minutes before adding them to the bowl. It makes a big difference in the final taste.

Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 1 cup crisp apple, chopped
  • 1 cup red grapes, halved
  • 1/2 cup celery, thinly sliced
  • 1/2 cup walnuts, chopped
  • 1/3 cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

    In a large bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, salt, and pepper until smooth.

    Add the chicken, chopped apples, halved grapes, sliced celery, and walnuts to the bowl.
