There is something special about that bright and sweet corn salsa that makes any taco night better. It is packed with crisp veggies and a little bit of heat, making it the perfect topping for bowls or just to eat with a bag of tortilla chips.

My top tip for this recipe is to use frozen corn that has been thawed and drained well. It keeps the texture nice and crisp without watering down your salsa, and it saves you plenty of time in the kitchen.

Ingredients

  • 2 cups frozen sweet corn, thawed
  • 1/2 cup red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely minced
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Thaw your corn completely and pat it dry with a paper towel to remove any excess moisture.

  2. 2

In a medium bowl, combine the corn, diced red onion, fresh cilantro, and minced jalapeño.

  3. 3

Pour the lime juice over the mixture and season with salt and pepper.

  4. 4

Stir everything together until well combined and let it sit for at least ten minutes before serving so the flavors can mingle.

  5. 5

Adjust the salt or lime juice to your personal taste before serving.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. This salsa tastes even better the next day after the flavors have had time to soak into the corn. Serve it cold with salty tortilla chips or piled high on top of grilled chicken.
