This salad is one of my absolute favorites for potlucks and family gatherings. Everyone loves how the tangy dressing coats the pasta and beans, making it filling enough to be a main dish but light enough for a sunny afternoon lunch.

My top tip for this recipe is to let it sit in the fridge for at least an hour before serving. This gives the dressing a chance to soak into the pasta and helps the flavors really come together for the best taste.

Ingredients

  • 16 ounces rotini or bowtie pasta
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 red bell pepper, diced
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste

Instructions

    Boil a large pot of salted water and cook the pasta according to the package directions until al dente.

    Drain the pasta and rinse it with cool water to stop the cooking process, then set it aside in a large mixing bowl.

    Add the black beans, corn, diced bell pepper, cherry tomatoes, onion, and cilantro to the bowl with the pasta.

    In a separate small jar or bowl, whisk together the olive oil, red wine vinegar, honey, chili powder, and cumin.

    Pour the dressing over the pasta mixture and toss everything together until well coated.

    Season with salt and pepper to your liking, then cover and chill in the refrigerator before serving.

You can store this in an airtight container in the fridge for up to three days. If the pasta absorbs too much dressing, just add a small splash of olive oil or a squeeze of lime juice before serving to brighten it back up.
