This avocado egg salad is a wonderful way to brighten up your lunch routine. By swapping out some of the traditional mayonnaise for ripe avocado, you get a beautiful color and a much silkier texture that feels light but still satisfying.

Most people love this dish because it comes together in just a few minutes. If you want to keep the avocado from browning too quickly, just make sure to squeeze a little extra lemon juice right over the top before you stir everything together.

Ingredients

  • 6 large hard boiled eggs, peeled and chopped
  • 1 ripe avocado, pitted and diced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped red onion
  • 2 tablespoons fresh cilantro or parsley
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1

Place your chopped hard boiled eggs into a medium mixing bowl.

  2. 2

Add the diced avocado and the lemon juice to the bowl with the eggs.

  3. 3

Use a fork to gently mash the avocado until it reaches your preferred consistency, keeping some chunks for texture.

  4. 4

Fold in the red onion, fresh herbs, salt, and pepper until everything is evenly combined.

  5. 5

Taste and add a little more salt or lemon juice if you think it needs it, then serve immediately.

๐Ÿ’ก Tips

Serve this salad in lettuce cups for a light lunch or on top of toasted sourdough bread. If you have leftovers, press plastic wrap directly onto the surface of the salad before storing it in the fridge to help prevent the avocado from darkening.
