If you love pickles as much as I do, this chicken salad will quickly become a favorite in your kitchen. It has the perfect crunch from chopped pickles and a wonderful savory flavor that keeps everyone coming back for another scoop.

This is such a simple dish to whip up when you have some leftover chicken in the fridge. For the best results, use a high quality mayonnaise and make sure your pickles are nice and crisp.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/2 cup dill pickles, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon pickle juice
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. 1

Place your cooked chicken into a large mixing bowl.

  2. 2

Add the mayonnaise, chopped pickles, fresh dill, pickle juice, and garlic powder to the bowl with the chicken.

  3. 3

Stir everything together until the chicken is well coated in the creamy dressing.

  4. 4

Taste the salad and add salt and black pepper as needed.

  5. 5

Cover the bowl and let the mixture sit in the refrigerator for at least thirty minutes before serving to help the flavors meld together.

๐Ÿ’ก Tips

You can serve this salad inside crunchy lettuce cups for a light meal or pile it onto toasted bread for a hearty sandwich. Store any leftovers in an airtight container in the fridge for up to three days.
