There is nothing quite like a bowl of creamy homemade hummus. It is so much better than the store bought version and takes just minutes to prepare in your food processor. Everyone loves how fresh it tastes with a little extra lemon and garlic.

My best tip is to use high quality olive oil and a dash of smoked paprika on top for the perfect finish. It makes for a wonderful healthy snack that pairs perfectly with warm pita bread or fresh vegetable sticks.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1/4 cup fresh lemon juice
  • 1/4 cup well stirred tahini
  • 1 small garlic clove, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 2 to 3 tablespoons water
  • Dash of paprika for serving

Instructions

    Place the tahini and lemon juice into your food processor and blend for about one minute until the mixture is creamy.

    Add the olive oil, minced garlic, cumin, and a pinch of salt to the processor and blend for another thirty seconds.

    Add half of the chickpeas to the bowl and blend for a minute, then add the remaining chickpeas and blend until thick and smooth.

    If the hummus is too thick for your liking, slowly add the water one tablespoon at a time while blending until you reach your desired consistency.

    Taste and add more salt if needed, then scoop into a serving bowl and finish with a drizzle of olive oil and a sprinkle of paprika.

Store your leftover hummus in an airtight container in the fridge for up to four days. If you want a smoother texture, try removing the skins from the chickpeas before blending. Serve alongside toasted pita chips or cucumber slices.
