Creamy Horchata Icebox Cake
A cool and refreshing no bake dessert that tastes just like a chilled glass of horchata.
There is something so special about an icebox cake on a warm day. This version takes all the comforting flavors of cinnamon and vanilla found in traditional horchata and turns them into a creamy, dreamy dessert that everyone will ask for again.
Since you do not need to turn on the oven, this is a perfect treat when you want something sweet without heating up your kitchen. Just give it plenty of time in the fridge so the cookies soften into a cake like texture.
Ingredients
- 2 cups heavy whipping cream
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon vanilla extract
- 1 package graham crackers
- 1/4 cup toasted almonds, chopped

In a large chilled bowl, beat the heavy whipping cream, sugar, cinnamon, and vanilla together until stiff peaks form.

Spread a thin layer of the cinnamon cream on the bottom of an 8x8 inch square baking dish.

Arrange a layer of graham crackers over the cream, breaking them as needed to fit the pan.

Spread another layer of the cinnamon cream over the crackers, then repeat the layers until you run out of ingredients, finishing with a layer of cream on top.

Cover the dish and refrigerate for at least six hours or overnight so the crackers soften.
