Easy Smashed Date S'mores
A quick and healthy take on a campfire classic using sweet Medjool dates and rich dark chocolate.

I love keeping these in the freezer because they satisfy a sugar craving without much effort at all. Make sure your dates are nice and soft so they smash down easily without breaking apart too much.
Ingredients
- 10 large Medjool dates, pitted
- 1/2 cup creamy peanut butter
- 1 cup dark chocolate chips
- 1/4 cup crushed graham crackers
- 1/4 cup mini marshmallows
Instructions

Lay the pitted dates flat on a cutting board or a piece of parchment paper.

Place another piece of parchment paper over the dates and use the bottom of a heavy glass to smash each date until it is flattened.

Spread a small spoonful of creamy peanut butter onto each flattened date.

Melt the dark chocolate chips in the microwave in short intervals until smooth, then drizzle it over the peanut butter.

Sprinkle the crushed graham crackers and mini marshmallows on top of the chocolate before it sets.

Place the tray in the freezer for about 15 minutes to let the chocolate firm up completely before serving.

Store these in an airtight container in the freezer for up to two weeks. If you like an extra crunch, add a few chopped nuts on top of the marshmallow layer.
