If you love grabbing an ear of elote from a street vendor, you are going to adore this dip. It combines sweet corn with creamy sauce and a nice kick of chili for a snack that disappears almost as soon as you set it on the table. It is perfect for parties or just a casual Friday night at home.

My favorite trick for this recipe is to char the corn in a skillet before mixing it with the other ingredients. Getting that little bit of golden color makes a huge difference in the final taste. If you prefer a bit more heat, feel free to add an extra pinch of chili powder or a few more jalapeño slices.

Ingredients

  • 4 cups frozen corn kernels
  • 1 tablespoon olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled cotija cheese
  • 1/2 cup chopped fresh cilantro
  • 1 teaspoon chili powder
  • 1 jalapeño, seeded and finely diced
  • 1 lime, juiced
  • Salt to taste
  • Tortilla chips for serving

Instructions

    Heat the olive oil in a large skillet over medium high heat.

    Add the corn kernels to the pan and cook for about 8 to 10 minutes, stirring occasionally, until the corn is golden brown and slightly charred.

    Remove the corn from the heat and let it cool for a few minutes.

    In a large bowl, whisk together the mayonnaise, sour cream, lime juice, and chili powder.

    Stir in the charred corn, crumbled cotija cheese, diced jalapeño, and fresh cilantro until well combined.

💡 Tips

You can store any leftovers in an airtight container in the fridge for up to three days. This dip tastes great cold, but you can also warm it up in the microwave for a minute if you prefer. Try serving it with hearty corn chips so they do not break when you scoop up all that goodness.
