This creamy chicken alfredo is a favorite in my house because it saves so much time in the kitchen. By cooking the pasta directly in the sauce, you get a silky texture that is hard to beat, and the mushrooms add a lovely earthy flavor to the dish.

I love making this on busy weeknights when I want something indulgent but simple. Just keep an eye on the liquid levels as the pasta cooks to ensure the sauce stays nice and creamy.

Ingredients

  • 1 pound boneless skinless chicken breasts, diced
  • 8 ounces sliced mushrooms
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 pound fettuccine pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • Fresh parsley for garnish
