Salmon is such a wonderful choice when you want a meal that feels special but does not take all night to prepare. It is light, packed with good nutrients, and pairs beautifully with just about any side dish you have in your kitchen.

My biggest tip for this recipe is to keep an eye on your oven. Salmon cooks fast, and you want to pull it out right when it flakes easily with a fork so it stays nice and moist.

Ingredients

  • 2 salmon fillets, about 6 ounces each
  • 1 tablespoon olive oil
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

Place the salmon fillets on the prepared baking sheet skin side down.

  3. 3

Drizzle the olive oil over the fish and rub the minced garlic over the tops.

  4. 4

Sprinkle the fillets with oregano, salt, and pepper.

  5. 5

Arrange the lemon slices on top of each salmon fillet.

  6. 6

Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork.

  7. 7

Garnish with a little fresh parsley before serving.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. This salmon tastes great cold on top of a big green salad for lunch the next day.
