This pesto chicken salad is one of my favorite go to lunches when I want something quick but still special. It is packed with juicy chicken, savory pesto, and sweet roasted red peppers for a perfect balance of flavors.

I love serving this on a busy weekday because it comes together in minutes. If you have some leftover rotisserie chicken in the fridge, you can whip this up even faster for a satisfying meal that everyone will enjoy.

Ingredients

  • 2 cups cooked chicken, shredded or cubed
  • 1/3 cup prepared basil pesto
  • 1/4 cup mayonnaise
  • 1/2 cup jarred roasted red peppers, chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons pine nuts, toasted
  • Salt and black pepper to taste

Instructions

    Place the cooked chicken into a large mixing bowl.

    Add the pesto and mayonnaise to the bowl and stir until the chicken is well coated.
