Creamy Shrimp Macaroni Salad
This refreshing shrimp macaroni salad is the perfect crowd pleasing side dish for your next summer barbecue.
There is always one dish at every summer party that disappears from the table first, and this shrimp macaroni salad is definitely it. It is creamy, full of sweet shrimp, and has a lovely crunch from fresh vegetables that keeps everyone coming back for another scoop.
My best tip is to use a generous amount of Old Bay seasoning in your boiling water. It infuses the pasta and the shrimp with a savory flavor right from the start, which makes the whole salad taste incredible.
Ingredients
- 1 pound elbow macaroni
- 1 pound medium shrimp, peeled and deveined
- 2 tablespoons Old Bay seasoning
- 1 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 stalks celery, finely chopped
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely minced
- 2 tablespoons fresh dill, chopped

Cook the macaroni according to the package directions, then drain it and rinse under cold water to stop the cooking process.

In the same boiling water, cook the shrimp for about 2 to 3 minutes until they turn pink and opaque. Drain and let them cool down completely.

In a large bowl, whisk together the mayonnaise, sour cream, mustard, and lemon juice to create the dressing.

Add the cooled macaroni, shrimp, celery, bell pepper, red onion, and dill to the bowl.
