There is something so satisfying about a breakfast that feels like a treat. This chia pudding is one of my absolute favorites because it uses simple ingredients to create a creamy and light meal that keeps you full all morning long.

I love how easy this is to throw together the night before. You just blend the fruit and milk, stir in the seeds, and let the fridge do all the hard work while you sleep. It is the perfect grab and go option for busy mornings.

Ingredients

  • 1 cup fresh strawberries
  • 1 cup unsweetened almond milk or milk of your choice
  • 3 tablespoons chia seeds
  • 1 tablespoon maple syrup or your preferred sweetener
  • 1/2 teaspoon vanilla extract

Instructions

    Add the fresh strawberries and milk into a blender and process until completely smooth.

    Pour the strawberry mixture into a jar or a medium bowl.

    Add the chia seeds, maple syrup, and vanilla extract to the liquid.

    Whisk or stir everything very well to make sure the seeds are evenly distributed.

    Cover the container and place it in the refrigerator for at least four hours, or ideally overnight, until the pudding has thickened to a creamy consistency.

    Give the pudding a quick stir before serving, and top with extra sliced strawberries if you like.

You can store this in an airtight jar in the fridge for up to four days. If the pudding gets too thick after sitting, just stir in a splash of milk to loosen it up before you eat it.
