When my garden is overflowing with zucchini, this crispy Parmesan fried zucchini is one of my favorite things to make. It comes together in just 15 minutes, making it a perfect quick appetizer, snack, or easy side dish for busy weeknights.

I love how the panko and Parmesan cheese create such a light, crunchy coating that stays crisp while the zucchini stays tender inside. It is a wonderful way to use up your fresh produce, and the whole family is sure to enjoy these savory little bites.

Ingredients

  • 2 medium zucchinis, sliced into rounds
  • Salt and black pepper to taste
  • 1 cup all purpose flour
  • 3 large eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • Vegetable oil for frying

Instructions

    Season your zucchini slices with a little salt and pepper.

    Set up three shallow bowls for your breading station. Place the flour in the first bowl. Put the beaten eggs in the second bowl. In the third bowl, stir together the panko, Parmesan cheese, and Italian seasoning.

    Dip each zucchini slice first into the flour, shaking off any excess. Next, dip it into the beaten eggs, and finally press it into the panko mixture until well coated.

    Pour about 1/2 inch of oil into a medium saucepan and heat it to 350 degrees over medium high heat.

    Fry the zucchini in small batches for 4 to 5 minutes, turning once, until they are golden brown and crispy.

    Remove the zucchini with a slotted spoon and let them drain on a paper towel before serving warm with your favorite dipping sauce like ranch or marinara.

Serve these warm with ranch, marinara, or fry sauce for the best flavor. If you have leftovers, store them in an airtight container in the fridge for up to 5 days, or reheat them directly in an oven or air fryer at 375 degrees to get that crunch back.
