Zucchini fritters are a favorite in my kitchen because they are so simple to make and always disappear from the plate quickly. They are wonderfully light and have a beautiful crunch that makes them hard to resist when served straight from the pan.

The secret to the best fritters is squeezing as much water as possible out of the shredded zucchini before you mix the batter. This ensures they get perfectly golden and crispy instead of soggy while they fry.

Ingredients

  • 1 pound zucchini, grated
  • 1/2 teaspoon salt
  • 2 large eggs, lightly beaten
  • 1/4 cup scallions, thinly sliced
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon lemon zest
  • 1/2 cup all purpose flour
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil for frying

    Place the grated zucchini in a colander and sprinkle with the salt. Let it sit for 10 minutes, then use a clean kitchen towel or cheesecloth to squeeze out as much moisture as you can.

    In a large bowl, whisk together the eggs, scallions, garlic, dill, and lemon zest.

    Stir in the squeezed zucchini, flour, and pepper until the mixture is combined.

    Heat the olive oil in a large skillet over medium heat.
