This Chinese chicken salad is a favorite in my house because it perfectly balances fresh crunch with tender chicken. It is a fantastic option for lunch or a light dinner when you want something satisfying but not too heavy.

My top tip is to toast the almonds and sesame seeds right before you serve the salad. This little extra step adds a wonderful nutty aroma that makes the whole dish feel extra special.

Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups Napa cabbage, thinly sliced
  • 1 cup carrots, julienned
  • 3 green onions, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup toasted sliced almonds
  • 1 tablespoon toasted sesame seeds
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced

Instructions
