Easy Baked Cajun Jambalaya

Ingredients

- 1 pound boneless, skinless chicken thighs, cut into bite sized pieces
- 12 ounces andouille or smoked sausage, sliced into rounds
- 1 onion, diced
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 1 1/2 cups long grain white rice
- 1 can (14.5 ounces) diced tomatoes
- 2 1/2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 pound large shrimp, peeled and deveined
- 2 green onions, sliced for garnish
Instructions

Preheat your oven to 375 degrees Fahrenheit.

Heat the olive oil in a large oven safe pot or Dutch oven over medium high heat.

Add the chicken and sausage to the pot. Cook them until they are browned on all sides, then remove the meat and set it aside.
