Pan Seared Chuck Eye Steak
This hidden gem offers the rich beefy flavor of a ribeye at a much friendlier price point.
If you love a juicy steak but want to save a little money, you have to try the chuck eye steak. It comes from the same muscle as the ribeye and packs a serious punch when it comes to flavor and tenderness.
My favorite thing about this cut is how well it takes to a simple pan sear. Just treat it like any premium cut and you will be surprised at how delicious your dinner turns out.
Ingredients
- 2 chuck eye steaks, about 1 inch thick
- 1 tablespoon high heat oil like avocado or grapeseed oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, smashed
- 2 sprigs fresh rosemary
- Kosher salt to taste
- Freshly cracked black pepper to taste

Take your steaks out of the fridge about 30 minutes before cooking to let them reach room temperature.

Pat the steaks very dry with paper towels and season both sides generously with salt and pepper.

Heat the oil in a heavy cast iron skillet over medium high heat until it just starts to smoke.

Place the steaks in the pan and sear for 3 to 4 minutes without moving them to get a nice crust.

Flip the steaks and add the butter, garlic, and rosemary to the pan.

Tilt the pan slightly and use a large spoon to baste the melted butter over the steaks for another 3 minutes for medium rare.

Remove the steaks from the skillet and let them rest on a cutting board for at least 5 to 10 minutes before slicing.

Slice against the grain and serve immediately with the pan juices.

Let the meat rest properly so the juices stay inside the steak instead of running out onto your board. If you have leftovers, store them in an airtight container for up to two days and use them in a stir fry or a hearty salad.
