There is something so special about waking up to the smell of a warm breakfast baking in the oven. This berry oatmeal bake is a family favorite because it feels like a treat but is made with wholesome ingredients that keep you full all morning long.

You will love the contrast between the tender, softened oats and the slightly crisp golden top. It is very easy to pull together on a weekend morning and tastes great with a splash of milk or a dollop of yogurt on top.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped walnuts
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk
  • 1 large egg
  • 3 tablespoons melted butter
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh or frozen berries

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and lightly grease a medium baking dish.

  2. 2

In a large bowl, mix together the rolled oats, walnuts, baking powder, cinnamon, and salt.

  3. 3

In a separate smaller bowl, whisk the milk, egg, melted butter, maple syrup, and vanilla extract until well combined.

  4. 4

Pour the liquid mixture over the dry oat mixture and stir gently to combine.

  5. 5

Add half of the berries to the bottom of your baking dish and pour the oatmeal mixture over the top.

  6. 6

Scatter the remaining berries over the surface of the oatmeal.

  7. 7

Bake for 35 to 40 minutes until the top is golden brown and the center is set.

  8. 8

Let it cool for a few minutes before serving warm.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat a portion in the microwave with a splash of milk to bring back that creamy texture. It also tastes delicious served cold with some fresh fruit on the side.
