If you love the tangy taste of pickles, this chicken salad is going to be your new go to lunch. It is incredibly simple to toss together and uses Greek yogurt for a creamy texture that feels much lighter than traditional versions made with mayo.

This recipe is perfect for busy weekdays because you can whip it up in minutes. I love to keep a batch in the fridge for a quick snack or a healthy sandwich filling when I am on the go.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup Greek yogurt
  • 1/2 cup dill pickles, finely chopped
  • 2 tablespoons pickle juice
  • 1/4 cup celery, finely diced
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. 1

Place your shredded or diced cooked chicken into a large mixing bowl.

  2. 2

Add the Greek yogurt, chopped dill pickles, pickle juice, celery, dried dill, and garlic powder to the bowl with the chicken.

  3. 3

Stir everything together until the chicken is well coated and the ingredients are evenly distributed.

  4. 4

Taste your salad and add salt and pepper as needed.

  5. 5

Serve immediately or place in the refrigerator for at least an hour to let the flavors blend together.

๐Ÿ’ก Tips

This salad tastes even better after it sits in the fridge for a few hours. Keep it in an airtight container for up to three days, and try serving it inside large lettuce leaves for a low carb option.
