Easy Homemade Breakfast Sandwiches
These tasty breakfast sandwiches feature fluffy baked eggs and savory sausage for a perfect morning meal.
dailyrecipesbook.comIf you enjoy picking up a breakfast sandwich from your local coffee shop, you are going to love making them at home. By baking the eggs in a pan rather than frying them one by one, you can easily prepare breakfast for the whole family without spending all morning at the stove.
The secret to these sandwiches is the water bath method for the eggs. This simple trick keeps the eggs soft and custard like instead of rubbery. It is a fantastic way to feed a crowd or prep a few sandwiches to keep in the fridge for busy mornings.
Ingredients
- 8 large eggs
- 2 tablespoons whole milk or half and half
- 1 tablespoon unsalted butter, melted and slightly cooled
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 6 English muffins, split
- Softened butter for spreading
- 6 pre cooked sausage patties
- 6 slices sharp cheddar cheese, each halved
Instructions
- 1
Preheat your oven to 325ยฐF and grease an 8 inch square baking pan with butter or cooking spray.
- 2
Whisk the eggs, milk, melted butter, salt, and pepper in a bowl until smooth, then pour the mixture into your prepared pan.
- 3
Place the egg pan inside a larger roasting pan, then fill the roasting pan with hot water until it reaches halfway up the sides of the egg pan.
- 4
Bake for 20 to 25 minutes until the eggs are just set, then let them cool for 5 minutes before cutting them into 6 equal squares.
- 5
While the eggs bake, heat the sausage patties according to the package instructions and toast your English muffins.
- 6
Spread a little butter on the warm muffins, then layer half a slice of cheese, a sausage patty, an egg square, and another half slice of cheese onto each muffin base.
- 7
Top with the remaining muffin halves and bake on a tray for 5 minutes until the cheese is melted and gooey.
๐ก Tips
To store these for later, wrap them individually in foil or plastic wrap once they have cooled completely and keep them in the fridge. When you are ready to eat, simply unwrap and microwave for about 60 seconds or pop them in the oven until heated through.
