There is something so special about waking up to a stack of warm, buttery crepes. These are so much easier to make than most people think, and you do not need any fancy equipment to get those perfectly crisp edges.

My favorite trick is to let the batter rest in the fridge for a little while before cooking. It helps the flour hydrate so your crepes come out tender every single time. Whether you prefer fresh berries and whipped cream or some melted cheese and ham, this recipe is a great starting point.

Ingredients

  • 1 and 1/2 cups whole milk
  • 2 large eggs
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 cup all purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Butter for the pan

Instructions

    Add the milk, eggs, sugar, melted butter, flour, salt, and vanilla into a blender.

    Pulse the mixture for about thirty seconds until the batter is completely smooth and no lumps remain.

    Place the blender jar in the refrigerator and let the batter rest for at least thirty minutes.

    Heat a nonstick skillet over medium heat and lightly coat the surface with a small amount of butter.

    Pour about one quarter cup of batter into the center of the pan and quickly tilt it in a circular motion to coat the bottom evenly.

    Cook for about two minutes until the edges start to look golden and crisp.

    Gently flip the crepe with a spatula and cook the other side for about one minute.

    Remove from the pan and repeat the process with the remaining batter.

You can keep finished crepes warm in an oven set to the lowest temperature by stacking them between pieces of parchment paper. If you have leftovers, store them in the fridge for up to two days and reheat them quickly in a warm skillet.
