If you love a good grinder sandwich, you are going to adore this pasta salad. It has everything you would expect, like salty cured meats, sharp provolone cheese, and those signature tangy peppers that really wake up your taste buds.

It is the perfect dish to bring to a summer cookout or to keep in the fridge for an easy lunch throughout the week. My favorite tip is to toss the pasta with a little extra dressing right before serving so it stays nice and moist.

Ingredients

  • 16 ounces rotini or bowtie pasta
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup diced salami
  • 1/2 cup diced pepperoni
  • 1 cup cubed provolone cheese
  • 1 cup shredded iceberg lettuce
  • 1/2 cup sliced pepperoncini peppers
  • 1/4 cup diced red onion
  • 1/2 cup halved cherry tomatoes
  • Salt and black pepper to taste

Instructions

    Cook the pasta in a large pot of salted boiling water according to the package directions. Drain it well and let it cool down.

    In a small bowl, whisk together the mayonnaise, red wine vinegar, oregano, garlic powder, red pepper flakes, salt, and pepper to make the dressing.

    In a large mixing bowl, combine the cooled pasta, salami, pepperoni, provolone cheese, pepperoncini, red onion, and cherry tomatoes.

    Pour the dressing over the salad and toss everything until it is well coated.

    Right before you are ready to serve, stir in the shredded lettuce so it stays fresh and crunchy.
