There is something so special about mini muffins. They are the perfect size for little hands or when you just want a small sweet bite with your morning coffee. These muffins come together quickly and are soft enough that everyone in the family will ask for seconds.

I love that you can customize the base recipe so easily. Whether you are craving fruit, chocolate, or a classic cinnamon spice, this simple batter works perfectly every single time. It is my favorite recipe for busy mornings.

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk
  • 1 large egg
  • 1/3 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries (for variation 1)
  • 1/2 cup chocolate chips (for variation 2)
  • 1/2 cup chopped strawberries (for variation 3)
  • 1 teaspoon cinnamon mixed with 2 tablespoons sugar (for variation 4)

Instructions

  1. 1

Preheat your oven to 375 degrees Fahrenheit and grease a mini muffin tin well.

  2. 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. 3

In a separate bowl, mix the milk, egg, melted butter, and vanilla until combined.

  4. 4

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.

  5. 5

Divide the batter into four equal portions if you want to make all flavors, or fold your chosen add ins directly into the main bowl of batter.

  6. 6

Spoon the batter into the prepared muffin tin, filling each cup about three quarters of the way full.

  7. 7

Bake for 10 to 12 minutes or until a toothpick inserted into the center comes out clean.

  8. 8

Let the muffins cool in the tin for 5 minutes before moving them to a wire rack.

๐Ÿ’ก Tips

Store your muffins in an airtight container at room temperature for up to three days. They also freeze beautifully, so keep a bag in the freezer for a quick grab and go breakfast throughout the week.
