Dinner really does not get much easier than this. You just stir everything together in a baking dish and let the oven do the hard work while the gnocchi cooks right in the savory marinara sauce.

It turns into a hearty meal with tender meatballs and a blanket of melted cheese on top. I love adding fresh spinach and cherry tomatoes to the pan so the meal feels complete right out of the oven.

Ingredients

  • 1 package shelf stable or refrigerated potato gnocchi
  • 1 bag frozen fully cooked meatballs
  • 1 jar marinara sauce
  • 1 cup cherry tomatoes
  • 2 cups fresh baby spinach
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup water

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    In a large baking dish, combine the uncooked gnocchi, frozen meatballs, marinara sauce, cherry tomatoes, and water.

    Stir everything well until the gnocchi and meatballs are coated in the sauce.

    Cover the dish tightly with foil and bake for 20 minutes.

    Remove the foil, stir in the fresh spinach, and sprinkle the mozzarella and Parmesan cheese over the top.

    Bake uncovered for another 10 minutes or until the cheese is golden and bubbly.

Leftovers store beautifully in an airtight container in the fridge for up to three days. You can easily reheat individual portions in the microwave. Serve this with a side of garlic bread or a crisp green salad to round out the meal.
