Simple Melting Tomato Spaghetti
This comforting pasta dish features juicy cherry tomatoes that break down into a sweet and savory sauce.
There is something truly magical about how cherry tomatoes transform when they hit a hot pan. As they cook, they burst and release all their juices, creating a light sauce that coats every strand of pasta perfectly without needing any heavy cream.
I love this recipe because it uses simple pantry staples you likely already have on hand. It is my go to meal when I want something fresh and delicious but do not have the energy to spend all night in the kitchen.
Ingredients
- 12 ounces spaghetti
- 2 pints cherry tomatoes
- 4 cloves garlic, thinly sliced
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon red pepper flakes
- 1/2 cup fresh basil leaves, torn
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
Instructions
- 1
Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions until al dente.
- 2
While the pasta cooks, heat the olive oil in a large skillet over medium heat.
- 3
Add the cherry tomatoes and garlic to the skillet, cooking them for about 10 to 12 minutes until the tomatoes burst and soften into a sauce.
- 4
Stir the red pepper flakes, salt, and pepper into the tomato mixture.
- 5
Reserve half a cup of the pasta water, then drain the spaghetti.
- 6
Add the cooked pasta directly to the skillet with the tomatoes and toss well, adding a splash of the reserved water if the sauce seems too thick.
- 7
Remove from heat, stir in the fresh basil and Parmesan cheese, and serve immediately.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to two days. If the pasta absorbs the sauce while sitting, add a tiny splash of water or a drizzle of olive oil when you reheat it. Top with extra cheese for a deeper flavor.
